Beef and Sweet Potato Skillet
Ingredients:
- 1 lb ground beef
- 2 medium sweet potatoes, peeled and diced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 onion, chopped
- 1 tbsp Casa de S.A. Tex-Mex seasoning
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro (optional)
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large skillet over medium heat. Add onions and garlic, cooking until softened.
- Add ground beef and Casa de S.A. seasoning, cooking until browned and cooked through.
- Stir in diced sweet potatoes, cover, and cook for 10-15 minutes, stirring occasionally, until sweet potatoes are tender.
- Add chopped bell peppers and cook for an additional 5 minutes, until peppers are tender and slightly charred.
- Sprinkle shredded Monterey Jack cheese over the skillet, cover, and cook for 2-3 minutes until the cheese is melted.
- Garnish with chopped cilantro if desired. Serve hot, and enjoy a flavorful, one-pan meal
