BBQ Ribs

Ingredients:

  • 2 racks of pork ribs
  • 3 tbsp Casa de S.A. Tex-Mex seasoning
  • 1 cup BBQ sauce
  • 2 tbsp olive oil

Instructions:

  1. Set BBQ pit to medium heat, around 275°F.
  2. Rub ribs with Casa de S.A. seasoning.
  3. Grill ribs for 2-3 hours, turning occasionally, until tender or until desired temperature is met.
  4. Brush with BBQ sauce during the last 30 minutes of cooking. Serve hot.

Beef Brisket

Ingredients:

  • 4 lbs beef brisket
  • 3 tbsp Casa de S.A. Tex-Mex seasoning
  • 1 cup BBQ sauce
  • 2 tbsp olive oil

Instructions:

  1. Set to 275°F. (rule of thumb is 1hr/lb)
  2. Rub brisket with Casa de S.A. seasoning.
  3. Cook in a covered pan for 3-4 hours, until tender. (rule of thumb is 1hr/lb)
  4. Brush with BBQ sauce during the last hour of cooking. Serve sliced.

Beef Sliders

Ingredients:

  • 1 lb ground beef
  • 2 tbsp Casa de S.A. Tex-Mex seasoning
  • 1/2 cup BBQ sauce
  • 8 slider buns
  • 4 slices cheddar cheese

Instructions:

  1. Set BBQ pit to medium-high heat, around 400°F.
  2. Mix ground beef with Casa de S.A. seasoning and form into patties.
  3. Grill for 4-5 minutes per side, until cooked to desired doneness.
  4. Brush with BBQ sauce during the last minute of grilling. Serve on slider buns with cheddar cheese and additional toppings if desired.

 

Chicken Skewers

Ingredients:

  • 1 lb chicken breast, cubed
  • 2 tbsp Casa de S.A. Tex-Mex seasoning
  • 1/4 cup BBQ sauce
  • 1 tbsp olive oil

Instructions:

  1. BBQ pit to medium-high heat, around 400°F (200°C).
  2. Toss chicken with olive oil and Casa de S.A. seasoning.
  3. Thread chicken onto skewers and grill for 10-12 minutes, turning occasionally, until cooked through. Brush with BBQ sauce before serving.

Chicken Wings

Ingredients:

  • 2 lbs chicken wings
  • 2 tbsp Casa de S.A. Tex-Mex seasoning
  • 1/4 cup BBQ sauce (optional)
  • 1 tbsp olive oil

Instructions:

  1. Set BBQ pit to medium-high heat, around 400°F or preheat oven to the same temperature.
  2. Toss wings in olive oil and Casa de S.A. seasoning.
  3. Grill or bake for 25-30 minutes, until crispy.
  4. Toss with BBQ sauce and serve.

Pulled Pork Sandwiches

Ingredients:

  • 3 lbs pork shoulder
  • 3 tbsp Casa de S.A. Tex-Mex seasoning
  • 1 cup BBQ sauce
  • 1/2 cup apple cider vinegar (add till desired taste is met)

Instructions:

  1. Set to low heat, around 250°F.
  2. Rub pork shoulder with Casa de S.A. seasoning.
  3. Cook pork for 8 hours or until tender.
  4. Shred pork and mix with BBQ sauce and apple cider vinegar. Serve on buns with coleslaw.

Ribs and Pineapple Glaze

Ingredients:

  • 1 cup pineapple juice
  • 1/2 cup BBQ sauce
  • 2 tbsp olive oil

Instructions:

  1. Set BBQ pit to medium heat, around 275°F.
  2. Rub ribs with Casa de S.A. seasoning.
  3. Cook ribs for 2-3 hours, turning occasionally.
  4. Brush with a mixture of pineapple juice and BBQ sauce during the last 30 minutes of cooking. Serve hot.
