Dinner Entrees
BBQ Ribs
Ingredients:
- 2 racks of pork ribs
- 3 tbsp Casa de S.A. Tex-Mex seasoning
- 1 cup BBQ sauce
- 2 tbsp olive oil
Instructions:
- Set BBQ pit to medium heat, around 275°F.
- Rub ribs with Casa de S.A. seasoning.
- Grill ribs for 2-3 hours, turning occasionally, until tender or until desired temperature is met.
- Brush with BBQ sauce during the last 30 minutes of cooking. Serve hot.
Beef Brisket
Ingredients:
- 4 lbs beef brisket
- 3 tbsp Casa de S.A. Tex-Mex seasoning
- 1 cup BBQ sauce
- 2 tbsp olive oil
Instructions:
- Set to 275°F. (rule of thumb is 1hr/lb)
- Rub brisket with Casa de S.A. seasoning.
- Cook in a covered pan for 3-4 hours, until tender. (rule of thumb is 1hr/lb)
- Brush with BBQ sauce during the last hour of cooking. Serve sliced.
Beef Sliders
Ingredients:
- 1 lb ground beef
- 2 tbsp Casa de S.A. Tex-Mex seasoning
- 1/2 cup BBQ sauce
- 8 slider buns
- 4 slices cheddar cheese
Instructions:
- Set BBQ pit to medium-high heat, around 400°F.
- Mix ground beef with Casa de S.A. seasoning and form into patties.
- Grill for 4-5 minutes per side, until cooked to desired doneness.
- Brush with BBQ sauce during the last minute of grilling. Serve on slider buns with cheddar cheese and additional toppings if desired.
Chicken Skewers
Ingredients:
- 1 lb chicken breast, cubed
- 2 tbsp Casa de S.A. Tex-Mex seasoning
- 1/4 cup BBQ sauce
- 1 tbsp olive oil
Instructions:
- BBQ pit to medium-high heat, around 400°F (200°C).
- Toss chicken with olive oil and Casa de S.A. seasoning.
- Thread chicken onto skewers and grill for 10-12 minutes, turning occasionally, until cooked through. Brush with BBQ sauce before serving.
Chicken Wings
Ingredients:
- 2 lbs chicken wings
- 2 tbsp Casa de S.A. Tex-Mex seasoning
- 1/4 cup BBQ sauce (optional)
- 1 tbsp olive oil
Instructions:
- Set BBQ pit to medium-high heat, around 400°F or preheat oven to the same temperature.
- Toss wings in olive oil and Casa de S.A. seasoning.
- Grill or bake for 25-30 minutes, until crispy.
- Toss with BBQ sauce and serve.
Pulled Pork Sandwiches
Ingredients:
- 3 lbs pork shoulder
- 3 tbsp Casa de S.A. Tex-Mex seasoning
- 1 cup BBQ sauce
- 1/2 cup apple cider vinegar (add till desired taste is met)
Instructions:
- Set to low heat, around 250°F.
- Rub pork shoulder with Casa de S.A. seasoning.
- Cook pork for 8 hours or until tender.
- Shred pork and mix with BBQ sauce and apple cider vinegar. Serve on buns with coleslaw.
Ribs and Pineapple Glaze
Ingredients:

- 1 cup pineapple juice
- 1/2 cup BBQ sauce
- 2 tbsp olive oil
Instructions:
- Set BBQ pit to medium heat, around 275°F.
- Rub ribs with Casa de S.A. seasoning.
- Cook ribs for 2-3 hours, turning occasionally.
- Brush with a mixture of pineapple juice and BBQ sauce during the last 30 minutes of cooking. Serve hot.
