Beef and Bean Burrito

Ingredients:

For the Burritos:

  • 1 lb ground beef

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup shredded cheddar cheese

  • 1/2 cup diced onions

  • 1/2 cup diced bell peppers (any color)

  • 1 tablespoon Casa de S.A. Tex-Mex Seasoning

  • 8 large flour tortillas

  • 2 tablespoons olive oil

For the Garnish:

  • Salsa or Pico de Gallo

  • Fresh cilantro, chopped

  • Sliced jalapeños (optional)

  • Sour cream or Greek yogurt

Instructions:

  1. In a skillet, heat olive oil over medium heat. Add the ground beef, diced onions, and bell peppers. Cook until the beef is browned and the vegetables are tender. Stir in Casa de S.A. Tex-Mex Seasoning and black beans. Cook until heated through.

  2. Heat the tortillas in a dry skillet over medium heat or wrap them in foil and warm them in the oven for a few minutes.

  3. Spoon the beef and bean mixture onto each tortilla and sprinkle with shredded cheddar cheese. Roll up the tortillas to enclose the filling.

  4. Serve the burritos with salsa or Pico de Gallo, fresh cilantro, sliced jalapeños, and a dollop of sour cream or Greek yogurt.

Beef and Bean Skillet

Ingredients:

For the Skillet:

  • 1 lb ground beef

  • 1 tablespoon Casa de S.A. Tex-Mex Seasoning

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1 cup diced tomatoes

  • 1/2 cup diced onion

  • 1/2 cup diced bell peppers (any color)

  • 1/2 cup shredded cheese (cheddar or Mexican blend)

  • 1 tablespoon olive oil

For Garnish:

  • Fresh cilantro, chopped

  • Sliced avocado

  • Lime wedges

  • Salsa

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Stir in Casa de S.A. Tex-Mex Seasoning and cook for an additional minute.

  2. Add diced onions and bell peppers. Cook until softened, about 5 minutes. Stir in black beans, corn, and diced tomatoes. Cook for another 5 minutes until everything is heated through.

  3. Sprinkle shredded cheese over the mixture and cover the skillet with a lid for 2-3 minutes, or until the cheese is melted.

  4. Garnish with fresh cilantro, sliced avocado, and a squeeze of lime juice. Serve with salsa on the side.

Beef and Sweet Potato Skillet

Ingredients:

  • 1 lb ground beef
  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 tbsp Casa de S.A. Tex-Mex seasoning
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add onions and garlic, cooking until softened.
  2. Add ground beef and Casa de S.A. seasoning, cooking until browned and cooked through.
  3. Stir in diced sweet potatoes, cover, and cook for 10-15 minutes, stirring occasionally, until sweet potatoes are tender.
  4. Add chopped bell peppers and cook for an additional 5 minutes, until peppers are tender and slightly charred.
  5. Sprinkle shredded Monterey Jack cheese over the skillet, cover, and cook for 2-3 minutes until the cheese is melted.
  6. Garnish with chopped cilantro if desired. Serve hot, and enjoy a flavorful, one-pan meal

Beef Chili

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp Casa de S.A. Tex-Mex seasoning
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) diced tomatoes
  • 1 cup beef broth
  • 1 cup corn kernels (fresh or frozen)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat. Cook onions and garlic until softened.
  2. Add ground beef and Casa de S.A. seasoning, cook until browned.
  3. Stir in beans, tomatoes, beef broth, and corn. Bring to a boil.
  4. Reduce heat and simmer for 30 minutes, stirring occasionally.
Season with salt and pepper. Serve with cornbread or tortilla chips.

Beef Enchiladas

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp Casa de S.A. Tex-Mex seasoning
  • 1 can (15 oz) tomato sauce
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas
  • 1/2 cup chopped fresh cilantro

Instructions:

  1. Cook ground beef with onion and garlic in a skillet over medium heat until browned.
  2. Stir in Casa de S.A. seasoning and tomato sauce, simmer for 10 minutes.
  3. Preheat oven to 375°F (190°C).
  4. Fill tortillas with beef mixture, roll up, and place in a baking dish.

Beef Enchilada Casserole

Ingredients:

  • 1 lb ground beef
  • 1 tbsp Casa de S.A. Tex-Mex seasoning
  • 1 can (10 oz) enchilada sauce
  • 8 small corn tortillas, cut into strips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup black beans, drained and rinsed
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup chopped fresh cilantro (optional)
  • 2 tbsp olive oil

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onions and garlic, cooking until softened.
  3. Add ground beef and Casa de S.A. seasoning, cook until browned and fully cooked.
  4. Stir in black beans and 1/2 cup of enchilada sauce.
  5. In the greased baking dish, spread a layer of tortilla strips. Top with half of the beef mixture and a sprinkle of cheddar cheese.
  6. Repeat layers with remaining tortillas, beef mixture, and cheese.
  7. Pour the remaining enchilada sauce over the top layer.
  8. Bake for 25-30 minutes, until the cheese is melted and bubbly.
  9. Garnish with chopped cilantro if desired. Serve hot for a satisfying meal.

Beef Skewers

Ingredients:

  • 1 lb beef sirloin, cut into cubes
  • 2 tbsp Casa de S.A. Tex-Mex seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • Wooden or metal skewers

Instructions:

  1. In a bowl, toss beef cubes with Casa de S.A. seasoning and olive oil.
  2. Thread beef, bell peppers, and onion onto skewers alternately.
  3. Preheat grill or broiler to medium-high heat.
  4. Grill or broil skewers for 8-10 minutes, turning occasionally, until beef is cooked to desired doneness.
  5. Serve with your favorite dipping sauces or a side salad.

Beef Tacos

  • 1 lb ground beef
  • 1 tbsp Casa de S.A. Tex-Mex seasoning
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 small tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • Salsa and sour cream for serving

Instructions:

  1. In a skillet, cook onions and garlic until softened.
  2. Add ground beef and Casa de S.A. seasoning, cook until browned and fully cooked.
  3. Warm tortillas in a dry skillet or oven.

Carne Asada Steak

For the Steak:

  • 1 1/2 lbs flank steak or skirt steak

  • 2 tablespoons Casa de S.A. Tex-Mex Seasoning

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • Juice of 2 limes

  • 1/4 cup fresh cilantro, chopped

  • 1 orange worths of juice AND/OR 1 tablespoon of soy sauce

    • Try both versions or combine ^. Orange juice brings more sweetness, while the soy sauce provides a more savory/salty taste.
  • 1 tablespoon vinegar (apple cider or white vinegar)

For the Garnish:

  • 1 cup shredded lettuce

  • 1 cup diced tomatoes

  • 1/2 cup thinly sliced red onions

  • 1/2 cup sliced radishes

  • 1/4 cup chopped fresh cilantro

  • Lime wedges

  • Salsa or Pico de Gallo

  • Avocado slices or guacamole (optional)

Instructions:

  1. In a bowl, mix together Casa de S.A. Tex-Mex Seasoning, olive oil, minced garlic, lime juice, chopped cilantro, soy sauce, and vinegar. Place the steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for best results.

  2. Preheat a grill to high heat or a skillet to medium-high heat. If using a skillet, add a little olive oil to prevent sticking.

  3. Remove the steak from the marinade and let excess marinade drip off. Grill or sear the steak for about 4-5 minutes per side, or until it reaches your desired level of doneness (medium-rare is recommended for carne asada). Transfer the steak to a cutting board and let it rest for 5 minutes before slicing.

  4. While the steak is resting, prepare the garnish: shred the lettuce, dice the tomatoes, thinly slice the red onions and radishes, and chop additional fresh cilantro.

  5. Slice the steak thinly against the grain. Arrange the steak slices on a serving platter. Garnish with shredded lettuce, diced tomatoes, sliced red onions, radishes, and fresh cilantro. Serve with lime wedges, salsa or Pico de Gallo, and avocado slices or guacamole if desired.
