Beef Enchilada Casserole
Ingredients:
- 1 lb ground beef
- 1 tbsp Casa de S.A. Tex-Mex seasoning
- 1 can (10 oz) enchilada sauce
- 8 small corn tortillas, cut into strips
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup black beans, drained and rinsed
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/2 cup chopped fresh cilantro (optional)
- 2 tbsp olive oil
Instructions:
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Heat olive oil in a skillet over medium heat. Add onions and garlic, cooking until softened.
- Add ground beef and Casa de S.A. seasoning, cook until browned and fully cooked.
- Stir in black beans and 1/2 cup of enchilada sauce.
- In the greased baking dish, spread a layer of tortilla strips. Top with half of the beef mixture and a sprinkle of cheddar cheese.
- Repeat layers with remaining tortillas, beef mixture, and cheese.
- Pour the remaining enchilada sauce over the top layer.
- Bake for 25-30 minutes, until the cheese is melted and bubbly.
- Garnish with chopped cilantro if desired. Serve hot for a satisfying meal.
