Spicy Tex-Mex Stuffed Peppers
Ingredients:
For the Stuffed Peppers:

4 large bell peppers (any color)

1 cup cooked rice or quinoa

1/2 lb ground beef or turkey

1-2 tablespoon Casa de S.A. Tex-Mex Seasoning

1 cup black beans, drained and rinsed
-
1 cup corn kernels (fresh, frozen, or canned)

1/2 cup diced onions
-
1 cup shredded cheese (cheddar or Mexican blend)

1/4 cup chopped cilantro
Instructions:

Prepare the Ingredients:

Cut the tops off the bell peppers and remove the seeds and membranes.

Cook quinoa or rice according to package instructions.

Cook the Beef and Vegetables:

In a skillet, cook the ground beef or turkey with Casa de S.A. Tex-Mex Seasoning until browned.

Add the onions, black beans, and corn, cooking for an additional 3-4 minutes.

Combine and Stuff:

Stir in the cooked quinoa or rice and half of the shredded cheese.

Stuff each bell pepper with the mixture and place in a baking dish.

Bake the Peppers:

Sprinkle the remaining cheese on top of each pepper.

Cover with foil and bake at 375°F (190°C) for 30 minutes. Remove foil and bake for an additional 10 minutes.

Garnish and Serve:

Garnish with chopped cilantro before serving.
