Spicy Tex-Mex Stuffed Peppers

 Ingredients:

For the Stuffed Peppers:

  • 4 large bell peppers (any color)

  • 1 cup cooked rice or quinoa

  • 1/2 lb ground beef or turkey

  • 1-2 tablespoon Casa de S.A. Tex-Mex Seasoning

  • 1 cup black beans, drained and rinsed

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1/2 cup diced onions

  • 1 cup shredded cheese (cheddar or Mexican blend)

  • 1/4 cup chopped cilantro

Instructions:

  1. Prepare the Ingredients:

    • Cut the tops off the bell peppers and remove the seeds and membranes.

    • Cook quinoa or rice according to package instructions.

  2. Cook the Beef and Vegetables:

    • In a skillet, cook the ground beef or turkey with Casa de S.A. Tex-Mex Seasoning until browned.

    • Add the onions, black beans, and corn, cooking for an additional 3-4 minutes.

  3. Combine and Stuff:

    • Stir in the cooked quinoa or rice and half of the shredded cheese.

    • Stuff each bell pepper with the mixture and place in a baking dish.

  4. Bake the Peppers:

    • Sprinkle the remaining cheese on top of each pepper.

    • Cover with foil and bake at 375°F (190°C) for 30 minutes. Remove foil and bake for an additional 10 minutes.

  5. Garnish and Serve:

    • Garnish with chopped cilantro before serving.
