Black Bean and Corn Quesadilla
Ingredients:
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 cup shredded Monterey Jack cheese
- 1 tbsp Casa de S.A. Tex-Mex seasoning
- 4 large flour tortillas
- 1 tbsp olive oil
- Salsa and sour cream for serving
Instructions:
- In a bowl, mix black beans, corn, cheese, and Casa de S.A. seasoning.
- Heat a skillet over medium heat and lightly oil.
- Place one tortilla in the skillet, spread half of the bean mixture on one half of the tortilla, then fold the tortilla over.
- Cook for 2-3 minutes per side until golden brown and cheese is melted.
