Breakfast Hash

Ingredients:

  • 2 cups diced potatoes
  • 1/2 lb ground beef
  • 1 tbsp Casa de S.A. Tex-Mex seasoning
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 4 large eggs
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions:

  1. Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced potatoes and cook until crispy and tender, about 10 minutes. Remove and set aside.
  2. In the same skillet, add remaining olive oil and cook ground beef with Casa de S.A. seasoning until browned.
  3. Add bell peppers, onions, and garlic to the beef, cooking until softened.
  4. Stir in the cooked potatoes and mix well.
  5. Make 4 small wells in the mixture and crack an egg into each well. Cover and cook until eggs are done to your liking.
  6. Season with salt and pepper. Garnish with chopped cilantro if desired before serving.
