Cauliflower Tacos

Ingredients:

  • 1 head cauliflower, cut into florets
  • 1 tbsp Casa de S.A. Tex-Mex seasoning
  • 2 tbsp olive oil
  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions:

  1. Preheat oven to 425°F. Toss cauliflower florets with olive oil and Casa de S.A. seasoning.
  2. Spread cauliflower on a baking sheet and roast for 25-30 minutes, until crispy and golden.
  3. Warm tortillas in a dry skillet or microwave.
  4. Fill tortillas with roasted cauliflower, shredded lettuce, diced tomatoes, and chopped cilantro.
  5. Serve with lime wedges.
