Cauliflower Tacos
Ingredients:
- 1 head cauliflower, cut into florets
- 1 tbsp Casa de S.A. Tex-Mex seasoning
- 2 tbsp olive oil
- 8 small flour or corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions:
- Preheat oven to 425°F. Toss cauliflower florets with olive oil and Casa de S.A. seasoning.
- Spread cauliflower on a baking sheet and roast for 25-30 minutes, until crispy and golden.
- Warm tortillas in a dry skillet or microwave.
- Fill tortillas with roasted cauliflower, shredded lettuce, diced tomatoes, and chopped cilantro.
- Serve with lime wedges.
