Chickpea Salad
Ingredients:
For the Salad:

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cup diced cucumber

1/2 cup diced red bell pepper
-
1/4 cup diced red onion
-
1 tablespoon Casa de S.A. Tex-Mex Seasoning

2 tablespoons olive oil
-
Juice of 1 lime

Salt and pepper to taste
For the Garnish:

Fresh cilantro, chopped

Avocado slices
-
Crumbled feta cheese (optional)
Instructions:

Prepare the Ingredients:

Halve the cherry tomatoes and dice the cucumber and red bell pepper.

Dice the red onion.

Mix the Salad:

In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red bell pepper, and red onion.

In a small bowl, whisk together Casa de S.A. Tex-Mex Seasoning, olive oil, lime juice, salt, and pepper.

Pour the dressing over the salad and toss to coat.

Garnish and Serve:

Garnish with fresh cilantro, avocado slices, and crumbled feta cheese if desired.
