Chickpea Salad

Ingredients:

For the Salad:

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 cup cherry tomatoes, halved

  • 1 cup diced cucumber

  • 1/2 cup diced red bell pepper

  • 1/4 cup diced red onion

  • 1 tablespoon Casa de S.A. Tex-Mex Seasoning

  • 2 tablespoons olive oil

  • Juice of 1 lime

  • Salt and pepper to taste

For the Garnish:

  • Fresh cilantro, chopped

  • Avocado slices

  • Crumbled feta cheese (optional)

Instructions:

  1. Prepare the Ingredients:

    • Halve the cherry tomatoes and dice the cucumber and red bell pepper.

    • Dice the red onion.

  2. Mix the Salad:

    • In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red bell pepper, and red onion.

    • In a small bowl, whisk together Casa de S.A. Tex-Mex Seasoning, olive oil, lime juice, salt, and pepper.

    • Pour the dressing over the salad and toss to coat.

  3. Garnish and Serve:

    • Garnish with fresh cilantro, avocado slices, and crumbled feta cheese if desired.

    • Serve immediately or chill in the refrigerator until ready to serve.
