Spanish Bean Soup

Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp Casa de S.A. Tex-Mex seasoning
  • 4 cups vegetable broth
  • 2 tbsp olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until softened.
  2. Add beans, diced tomatoes, Casa de S.A. seasoning, and vegetable broth.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Serve hot with your choice of bread.
