Stuffed Mushrooms
Ingredients:
- 16 large white mushrooms, stems removed
- 1 cup cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped cooked chorizo (optional)
- 2 tbsp Casa de S.A. Tex-Mex seasoning
- 1/4 cup chopped fresh cilantro
- 1/4 cup finely chopped red bell pepper
- Olive oil for brushing
Instructions:
- Set oven to 375°F (190°C).
- In a bowl, mix cream cheese, cheddar cheese, chorizo (if using), Casa de S.A. seasoning, cilantro, and bell pepper.
- Fill each mushroom cap with the cheese mixture.
- Arrange mushrooms on a baking sheet, brush with olive oil, and bake for 15-20 minutes, until mushrooms are tender and filling is golden.
- Garnish with additional cilantro if desired.
