Stuffed Mushrooms

Ingredients:

  • 16 large white mushrooms, stems removed
  • 1 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cooked chorizo (optional)
  • 2 tbsp Casa de S.A. Tex-Mex seasoning
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup finely chopped red bell pepper
  • Olive oil for brushing

Instructions:

  1. Set oven to 375°F (190°C).
  2. In a bowl, mix cream cheese, cheddar cheese, chorizo (if using), Casa de S.A. seasoning, cilantro, and bell pepper.
  3. Fill each mushroom cap with the cheese mixture.
  4. Arrange mushrooms on a baking sheet, brush with olive oil, and bake for 15-20 minutes, until mushrooms are tender and filling is golden.
  5. Garnish with additional cilantro if desired.
