Tex-Mex Veggie Quesadillas

Ingredients:

For the Quesadillas:

  • 1 tablespoon Casa de S.A. Tex-Mex Seasoning

  • 2 tablespoons olive oil

  • 1 cup sliced bell peppers (any color)

  • 1/2 cup sliced onions

  • 1 cup mushrooms, sliced

  • 1 cup shredded cheese (cheddar or Mexican blend)

  • 4 large flour tortillas

Instructions:

  1. Prepare the Vegetables:

    • Slice the bell peppers, onions, and mushrooms.

    • Heat olive oil in a skillet over medium heat.

    • Add the vegetables and sauté until tender, about 5-7 minutes. Stir in Casa de S.A. Tex-Mex Seasoning.

  2. Assemble the Quesadillas:

    • Place one tortilla in a skillet over medium heat.

    • Sprinkle half of the cheese over the tortilla, add a portion of the veggie mixture, and top with another tortilla.

  3. Cook and Flip:

    • Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

  4. Serve and Enjoy:

    • Cut into wedges and serve with salsa and sour cream.
